Darling Cellars, founded in 1997 as a privately owned winery is situated on the West Coast of South Africa. Consistently upholding a philosophy focused on genuineness and quality. The core mission underscores a profound reverence for the land and its produce: to create wines that not only capture the distinctive terroir of the Darling region but also showcase the grape varietals flourishing in its environment.

This steadfast commitment to authenticity ensures that every bottle of Darling Cellars wine mirrors the natural splendour and agricultural excellence of the region.

The farm

Darling Cellars sits on the R315 between Malmesbury and Darling, just 1 hour’s drive from Cape Town and 15 kms from the coast line.

The cool and temperate West Coast climate lends itself to a variety of different micro- and meso-climates which, along with the different soil types, lead to unique grapes which we guide into even more unique wines. With approximately 95% of all our vineyards being Unirrigated (dry land) and roughly the same percentage being bush vines (i.e. not trellised), this is as close as one can get to what nature intended for grapes to be.

Relying on natural rainfall in a practice known as dry farming. This method encourages deeper root growth, resulting in more robust and drought- resistant vines. Additionally growing bush vines allows the vines to grow in a more natural state, potentially reducing the need for chemical inputs, promoting the health of the vineyard ecosystem and further more producing grapes which are naturally balanced with no dilution of concentration, just like nature intended.

Creating an identity stretches further than just a brand and logo. It encompasses a certain look and feel about the cellar, the wine, label and bottle, the attitude of the people and the presentation of all these factors. An integrated strategy is thus followed from grapes to wine.

Passion is essential for this whole concept to work and is a trait shared by everyone at Darling Cellars. The wines are crafted to show class and complexity, offering a sincere sense of enjoyment while staying true to the unique terroir of the West Coast, Darling district and its varietal character.

Viticulture

The Vines that define us

Approximately 95% of our 600 hectares are dedicated to dryland bush vines—resilient, low-yielding, and perfectly suited to our region. These vines have deep roots that draw nutrients from ancient soils, producing intensely concentrated fruit. Our commitment to hand-pruning and harvesting ensures precision and preserves the integrity of every vineyard block.

Varietals

Darling is renowned for its exceptional Sauvignon Blanc and Shiraz, where the cool Atlantic influence imparts a refreshing intensity to the wines. Our key varietals include Pinotage, Chenin Blanc, Grenache, Mourvèdre, Merlot, Cinsaut, and a very rare block of Bukettraube. The historic vineyards, with Chenin Blanc and Cinsaut dating back over 35 years, are central to our identity. Grenache thrives in dry conditions, while Shiraz offers depth, colour, and complexity. Sauvignon Blanc remains synonymous with Darling Cellars.

Terroir

Situated 6–30 km from the Atlantic Ocean, Darling benefits from cooling sea breezes, morning mist, and the cold Benguela current, which contribute to a slower ripening process and balanced wines. Our decomposed granite and Oakleaf soils, combined with varied slopes and aspects, create natural diversity. Cooler coastal sites enhance freshness, while warmer inland areas build fruit intensity.

ART OF WINEMAKING

In the Cellar

Since 1948, our cellar has been extensively modernized, featuring stainless steel tanks ranging from 5,000L to 54,000L. This enables us to produce both small-batch, distinctive wines and larger, consistent volume brands. The barrel-aging cellar, housing around 450 barrels, is the heart of our operation.

Winemaking is both a science and an art. Each vintage brings its own natural variations, and our challenge is to express the unique character of each cultivar and vintage while maintaining consistency. Blending, deep vineyard knowledge, and close collaboration between producers and winemakers are key. With only one chance to harvest at the perfect moment, precise timing is critical.

In the cellar, we handle grapes and wines as naturally as possible. Quality fruit, modern equipment, skilled people, and a shared passion for wine form the foundation of everything we produce.

Our bottling

At Darling Cellars, we offer a complete range of bottling, packaging, and logistics solutions tailored to the needs of wine producers, brand owners, and export partners. Combining advanced technology, industry expertise, and a commitment to quality, we provide efficient, flexible, and reliable services from bottling through to final dispatch.

Our modern, automated bottling facility is equipped to handle a variety of wine packaging requirements with precision and consistency. We offer:

  • Quality control throughout the bottling process
  • Flexible production runs to accommodate various brand requirements

Darling Cellars operates two Bag-in-Box filling lines, providing clients with efficient and cost-effective packaging solutions for a range of market applications. Our Bag-in-Box capabilities offer both traditional and modern packaging formats, delivering convenience, quality, and extended product freshness. Notably, we are the only Bag-in-box line globally that utilizes the innovative, customer-friendly E-tap closure for filling Bib’s.

Our dedicated Méthode Cap Classique (MCC) line offers specialised services for Cap Classique wine producers, including:
