  The Onyx semi-precious stone, resembling the dark granite soils of Darling’s premier vineyards, was chosen as the name for our flagship range. Used as a decorative stone in jewellery, it shines as the jewels in the crown of Darling Cellars’ production.
Onyx comes from specific vineyards which are selected for their uniqueness in prominent terroir flavours. These vineyards are planted in the best terroir for the specific varietal. Vineyards are carefully monitored by the winemaker who ultimately decides when the grapes will be harvested. These grapes are handled separately in the cellar to preserve their natural quality and uniqueness.

Onyx is a dedicated concept from site selection, through to the final drop in the glass at the end of a bottle.
 
   
  Sauvignon Blanc

Winemaker’s comments:
Nettles, passion fruit, green figs and traces of gooseberry on the nose. The palate displays mineral complexity with a well-rounded balance and a long lingering aftertaste. Seafood dishes, served on a garden salad in early summer…the perfect accompaniment.

Noble Late Harvest

Winemaker’s comments:
This Noble Late Harvest was made in a Southern style, with lower sugar and more wood influences.  The wine shows dried fruit flavours and a good concentration on the palate.  The sugar, acid and alcohol is well balanced and the wood maturation adds to the complexity and structure of this sweet wine.

  Shiraz

Winemaker’s comments:
Showing its Darling heritage with darker forest fruits, and a hint of plum and dark chocolate on the nose. The soft tannins and smokiness will mature a typical old world truffle, meaty and savoury Darling Syrah! Nothing overripe, but full bodied and integrated… Age for a maximum of 8 years and savour with friends, food and…or maybe just spoil yourself…

Kroon

Winemaker’s comments:
A unique blend in South Africa, and for that matter, in the world! With all components fermented together, another unique concept comes to the fore. This wine is from the beginning destined to be Kroon, no blending afterwards, no alterations. Thus only the best grapes are used for this small production of our Flagship wine. Chocolate, cinnamon and spicy notes on the nose, with lots of supporting fruit. A true drinking experience and a must have with good food and friends.

Cabernet Sauvignon

Winemaker’s comments:
Bell pepper and hints of cassis on the nose. A typical Darling iodine characteristic off seaweed/bamboo on the nose, reflecting the close proximity of the ocean. Wonderful light palate with integrated tannins and oak. A wine to be cellared and enjoyed on special occasions only.

Pinotage

Winemaker’s comments:
Vanilla pod, small red berries and a slight hint of banana makes up the complex and concentrated nose of this fine Pinotage. A full bodied wine, with underlying complexity and tannin, which only presents itself with time. Enjoy form 2009 to 2015.
