We have created some stand alone limited wines to showcase the diversity of Darling Cellars and the Darling region. All so unique, we couldn’t find a place for them in our 3 core ranges. Definitely wines to come look for, as they are only available from the cellar door.
Sir Charles Henry Darling
A classic blend of noble varietals showing cassis, wood shavings and a hint of smoky bacon on the nose. Complex fruit and wood flavours, along with a juicy, succulent palate makes this a very elegant, but finely balanced wine. This wine shows harmony, structure and finesse and will mature into a wonderful wine.

This wine shows a light yellow colour anda rich combination of peaches, citrus and vanilla on the nose. The palate is complex and very well balanced with a firm structure and clean flavours. Tannins, alcohol and fruit are finely balanced, makes this a definite food wine. The wine will gain more complexity with further maturation.

Rich straw in colour, with a beautiful array of bubbles as the wine is poured. Slight citrus notes on the nose are supported by ripe apple and brioche from the Chardonnay and 20 months on lees.
