Darling Cellars Premium comes from specific vineyards which are selected for their uniqueness in prominent terroir flavours. These vineyards are planted in the best terroir for the specific varietal. Vineyards are carefully monitored by the winemaker who ultimately decides when the grapes will be harvested. These grapes are handled separately in the cellar to preserve their natural quality and uniqueness.

Darling Cellars Premium is a dedicated concept from site selection, through to the final drop in the glass at the end of a bottle

  A unique blend in South Africa, and for that matter, in the world! With all components fermented together, another unique concept comes to the fore. This wine is from the beginning destined to be Kroon. Thus only the best grapes are used for this small production of our Flagship wine. Deep colour and intense aromas of plum, chocolate and spices like cinnamon and vanilla. The wood is very well integrated with the fruit flavours. This is a full bodied wine with a good balance of alcohol, acidity, tannin and fruit. Will complement good food like red meat or venison dishes.

Cabernet Sauvignon 2008

Cabernet Sauvignon 2008

An example of pure Cabernet Sauvignon fruit, with aromas of wood, ripe blackberries and cassis on the nose. It is a juicy, well structured wine with a hint of ripeness on the palate and an abundance of black fruit. The finish is long and smooth, with a slight smokiness. The tannin structure is firm but by no means aggressive, to emphasise the varietal characteristic. Further bottle ageing will have the wine soften a bit and with the nice acidity, this is a wine will last another 6 -9 years in a cellar.

Noble Late Harvest

  This Noble Late Harvest was made in a Sautern style, with lower sugar and light wood influences. The wine shows typical Botrytis flavours of dried fruit and good concentration on the palate. The sugar, acid and alcohol is well balanced and the wood maturation adds to the complexity and structure of this sweet wine. Serve cold with soft cheese.
