  The recent demarcation of the Darling district has led to a focus at Darling Cellars on wines which are terroir and varietal specific. The cool and temperate West Coast climate lends itself to a different micro- and mesoclimate which, along with the different types of soil, lead to unique grapes, which we guide into even more unique wines. Having 99% of all vineyards dry land and almost the same percentage as bush vine, this is as close to what nature intended for grapes to be as one can get.

DC is a wine range of straight varietals where the focus is on fruit driven, varietal true, value for money wines.
 
   
 

Bush Vine Sauvignon Blanc

Winemaker’s comments:
Herbaceous notes, asparagus and green fig dominate the palate with a wonderfully full palate and racy acidity on the finish.

Arum Fields Chenin Blanc

Winemaker’s comments:
A white to be decanted??? Well, yes! A very restraint and shy wine this early in the year. With decanting, guava, complimented with passion fruit, peach blossoms and citrus, dominate the nose. This lightly wood fermented Bush Vine Chenin Blanc was kept on fine lees for almost 3 months. A well rounded Chenin with a crisp fresh finish that will grow more complex with bottle maturation.

Quercus Gold Chardonnay

Winemaker’s comments:
Citrus, Orange blossoms and pineapple are the fruit flavours you’ll find on this little gem of a lightly wooded Chardonnay. A clean, soft mouth feel with lower acidity and pear on the palate makes this the perfect wine with or without food!

Terra Hutton Cabernet Sauvignon

Winemaker’s comments:
A typically Darling, fruit driven Cabernet Sauvignon. Some seaweed and bamboo notes on the nose from the ocean influence, with sweet tobacco on the palate. The wine has a great lingering palate of dry tannins and a silky smooth finish, complimented with dark forest fruits.

Six Tonner Merlot

Winemaker’s comments:
A soft, fruity wine with delicate ripe plum flavours both on the nose and palate. With the subtle use of oak, this wine has a wonderfully appealing balance between fruit and wood.

Black Granite Shiraz

Winemaker’s comments:
Another example of this fine varietal with a bit of a dry finish. A medium bodied wine displaying wild berries, and ripe plums on the nose. With a little time, it will develop into a lovely Darling Shiraz with opulent fruit and an integrated wood structure. Drink now until 2009.

Old Blocks Pinotage

Winemaker’s comments:
Fresh, but ripe fruit dominates this typical Darling Pinotage. Stone cherries and wild black berries play on the palate for an elegant, yet juicy mouth feel and the wine finishes with soft dry tannins.
