Varietals
The main focus in Darling is Sauvignon Blanc and Shiraz. The cool influence from the Atlantic Ocean makes Darling ideal area for growing premium quality Sauvignon blanc. Excellent performing cultivars include Pinotage, Chenin blanc, Grenache, Mourvedre, Merlot, Viognier and Nouvelle.

Chenin Blanc and Cinsaut has been around since the start of wine growing in Darling, with some producing blocks in the 40’s. Our Premium Pinotage block was planted in 1974, and still produces top quality grapes, at a low yield of 3 tonnes per hectare. 

Grenache is proving to be a great cultivar to work with in the vineyards. It can take the heat and dry land conditions very well, outperforming most cultivars in the dry years. The oldest Grenache we have dates back to 1975. Some Cinsaut blocks were planted in the late 1950’s, and still produce grapes for Darling Cellars. 

Shiraz is our top performing red cultivar and produces top quality grapes. Intense colour and fruit comes from these grapes with a multi-dimensional flavour profile.

Viognier is another newbie on the market, but shows a lot of promise, especially in a bush vine dry land area like Darling. Nouvelle shows a lot of character, and, just as Pinotage, it is a proudly South African cultivar, being a cross between Ugni blanc and Crouchen Blanc. Nouvelle shows a lot of so called “green” flavours, which complements Sauvignon Blanc to a great extent.
